She’s an amazing baker and her recipes never disappoint! This particular cheesecake recipe is extra special because it’s the perfect size for smaller gatherings. No need to make a huge 10-inch cake when you only have a few people to feed.

The other great thing about this recipe is that it’s pretty much foolproof. I’ve made it several times and it always turns out perfectly creamy and delicious. To make this 7 inch cheesecake, you’ll need:

Cream cheese: Make sure your cream cheese is at room temperature before beginning this recipe. This will help prevent any lumps in your final product.

Sour cream: I like to use full-fat sour cream in this recipe, but you could also use light sour cream if you prefer.

Just know that your cheesecake may not be quite as rich and creamy using the light version.

Sugar: For this recipe, you will require both granulated sugar and powdered sugar. The granulated sugar helps to sweeten the cream cheese and the powdered sugar helps to create a smooth and creamy texture.
